Ode to the beetroot

So, in the week's veggie box were some beetroot... Sounds tantalising huh? I'm sure they are, but how the feck do you cook a beetroot?? It's a little confusing... the only beetroot I've ever come across, live in a jar, with some type of pickling agents... in a word... disgusting!!

... and off to the kitchen with me... who knows what will become of the beetroot... that'll teach it to darken my veggie box in future
